THE SUMMER CULINARY ACADEMY
Join NanBon in the kitchen for a week of food and fun! Hone your skills and impress yourself in this hands-on cooking and baking camp. Learn essential culinary concepts like knife skills, sauteing, roasting, baking, pastry techniques and more while learning classic dishes and creating personal masterpieces. Each day will consist of an introductory lecture on knife skills, kitchen safety and etiquette. On the last day of each session, you will have a chance to get creative and use all you’ve learned to create your own unique dishes with the a list of specific ingredients.
Each session is a week-long cooking camp that meets from 9:00am-1:00pm. Cooking concludes roughly at 12 giving students time to enjoy their own creations for lunch. The total cost of each session is $385. The sessions are as follows:
Session 1: June 22-26
Session 2: June 29-July 3
Session 3: July 6-10
Session 4: July 13-17
Students must be ages 10-15
Classes will be held in NW DC near Howard University. Each session will tackle a variety of skills but each will consist of different menus.
+Day One: Stocks & Sauces - Chicken Stock, Chicken Roulade with sautéed mushrooms, Roasted Potatoes. Pound cake with Chocolate ganache and lemon curd
+Day Two: Saute & Braising - Braised short ribs over tagliatelle, Sauteed Vegetables and peach cobbler
+Day Three: Searing & Frying - Pan-Seared pork chops, fried apples and grits. Dessert: short bread cookies
+Day Four: Poaching & Steaming - Poached fish with Steamed vegetables. Dessert - poached pears and home made ice cream
+Day Five: Culinary Creation Competition
